Sauces, mustard, wasabi?

Hello guys, I hope you are doing good!
I read all the information about food in the book (purchased it 2 days ago, not a fast reader :lol: ) and I can't exactly figure it out, it says that soy sauce could be used as long as I can remember and all processed food should be avoided. But isn't soy sauce processed and also it contains a lot of salt right, which is bad for you? Also I really love mustard and Wasabi (also processed), but on the package it says it contains rapseed oil and sugar and 8gr of salt, of course I am not going to eat 100 grams of wasabi, because I don't wanna die :lol: but at least the sat fat is less than 1gr. :?: Honestely I don't like fish, but I do enjoy it with sushi. I love sushi with soy sauce and wasabi. It would break my heart if I can't eat it. Do you avoid these foods or do you think that in moderation it would be okay?

You could make your own mustard and wasabi paste and avoid any nasty ingredients. Here are some links for you:

Thank you, Jette for the recipes and advice! I am gluten intolerant though and I always buy this soy sauce from the local supermarket. It's says it contains soy beans, corn starch and water. Is it still considered processed, are they leaving out ingredients? Is corn starch considered a processed food?
