I am following a rather basic approach of OMS, which means I am eating vegan plus seafood, skip all kinds of dairy products, try to limit saturated fats and consume as much of unsaturated fats and omega3 as possible.

My question to you is how many gram of saturated fats is "okay" per day?
Have a look at the OMS book, page 135. Counting saturated fats is no longer recommended, just follow the OMS dietary recommendations, as you are.

I aim for a maximum of 10 grams each day. I don't beat myself up too much if I have 10-20 g per day, but would if I went over 20g. I would say I hit the target more days than not, wild stab in the dark an average of 12-13g.
I try to keep my daily intake to 12 grams per day.
I do like the French saying 'Everything in moderation, including moderation' which on OMS means for me to stay below 20 grams per day for special occasions.

I'm with Geoff just follow the guidelines and don't bother counting.
