There was a great discussion about eggs on the board and someone mentioned that egg whites were only good for merangue.

So here's my pancake recipe. You may need to fool with it a little - I've made it every sunday for the past 7 years for my family and don't use a recipe.. I've adaped it to the OMS diet. My kids never noticed.

Dry Ingredients
2 cups flour
1/4 cup sugar
1 Tbs Baking Powder
1/4 tsp Salt

Wet Ingredients
1/4 cup oil
1/4 cup egg whites, or the whites from 2 large eggs.
3/4 cup Water
1 tsp Vanilla

Mix wet and dry ingredients separately then all together.
Add water to get right consistency (I think I always end up adding a little water and salt)

Use oil spray or none at all with a non-stick pan

drop a tablespoon or so of batter onto pan on medium heat. When bubbles form on top of pancake and are dry, flip.

What kind of oil are you using for these pancakes? They sound amazing!
I use Canola oil only because it's my family tradition to eat pancakes every sunday and the professor says if you must, use Canola oil. It's not perfect, but that's it.

That's what I did and they were delicious!! Thank you for sharing the recipe!
I'm so glad it tasted good. And I forgot one ingredient - Almond Milk. I put in 1/2 cup of almond milk as well (you must have added more water to get the right consistency).
