I found this recipe for chocolate-zucchini muffins on the Happy herbivore website and made them on the weekend. They were a huge hit with both the little and grown-up kids - would never know they had a veggie hidden in them!
1&1/4 cups SR flour
1/4 cup cocoa
1&1/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 banana, mashed
3/4 cup raw sugar
1/2 cup unsweetened applesauce
1/4 cup non-dairy milk
1 tsp vanilla extract
1 cup shredded zucchini
Preheat oven to 180C.
Sift flour, cocoa, baking powder, baking soda, salt and cinnamon together.
In another large bowl,cream mashed banana with applesauce and sugar. Add in soymilk, vanilla and zucchini. Stir until evenly combined.
Add flour mix to wet mix in 3-4 batches and stir until just combined. Spoon mixture into muffin cases and bake 15-20 minutes or until cake tester comes out clean.
Try to eat just one!
