Gingerbread Biscuits

I love these biscuits, I make them once a week. They're not as crispy as the old buttery type but the flavour is awesome and are filled with lots of good ingredients.

Dry Ingredients

2 cups Wholemeal flour
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp powdered cinnamon
1/2 tsp powdered nutmeg
2 tsp powdered ginger
(tsp = teaspoon)

Wet Ingredients

1/2 cup raw sugar
1/3 cup EVOO
1/4 cup honey
1/4 cup soymilk

Blend the wet and dry ingredients together separately and then combine.
Cover and place in refrigerator for at least 20 minutes can even leave till the next day.
Remove from fridge and preheat oven to 170 degrees.
Sprinkle some wholemeal flour on a flat surface and kneed the mixture slightly till it's at room temperature.
Roll out till desired thickness and cut out with cookie cutter.
Cook in oven for approximately 8 minutes depending on size of biscuits.
Cool on a rack and eat!

I made these today, very yummy they are too.
I put all the wet stuff in a pan and gently heated first to melt/mix it together. My honey was firm set and the brown sugar thick and stuck together.

I will try it next time with a mix of apple suace and EVOO as a little too much oil I feel happy with.

I make a batch of these biscuits about once a month and they're yummy!

I use half EVOO and half apple sauce, which I worked it out as 40mls of each.
