Ingredients:
1 Cup of Raspberries
pulp of 3 passionfruit
2 Cups of Plain flour (I use half wholemeal half plain)
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 cup of sugar (I use a little less)
2 egg whites
1 cup of oat or soy milk
3 tablespoons of olive oil
1 teaspoon of vanilla essence
Combine all dry ingredients and sift, then gently stir in raspberries.
Mix all the wet ingredients together then add to dry ingredients stirring
gently until combined.
Spoon into muffin tin and bake at 180 degrees celcius for 15-20 mins.
