This I have made by adapting the great christmas pudding recipe that was on the Xmas blog last December

dry stuff
1 cup flour of choice but I used a gluten free flour
1/2 cup fresh ground almonds
1/2 teaspoon baking soda
mix together

wet stuff in a bowl
2 and a quarter cups of diced rhubard (not too big the peices)
1/2 cup unrefined dark brown mollases sugar
zest of one clementine sized orange
1/2 cup orange juice (use orange just zested and blend)
leave to soak and stir for about an hour
now grate one green apple into this mix, skin included but not pips/stalk
mix all together thoroughly

add by two heaped teaspoons at a time the dry mix to the wet mix and using spatula fold into the wet mix

this amount will fill a 6 silicon muffin pan twice, either way the ideal is about a 2 inch deep mixture no more.

decorate with almond chips/slivers if desired before baking

150c fan oven
Bake for 50 minutes the muffin pan

if I put mixture in a silicon loaf tin it needs longer to bake, even at 2 inches thick I still do it for about 1hr 15 minutes

slices and toasts and even slices and freezes, serve warm with a blob of homemade blackberry jam to dip in
Made this again today, very tastey.
