I made them with EVOO and you can taste it a little in the biscuit, but I looked up walnut oil as I still have some from before starting the diet - it's 9.3% sat fat vs 14% in EVOO, (the % of mono and poly unsaturated fats is reversed) and I have used walnut oil sometimes and it does makes for a better taste. The recipe temperature is 180 deg C, and I used a lower oven (160 deg) for slightly longer as walnut oil has a lower smoke point (160 deg C) than EVOO (191 deg C).

Rachel has experimented with other flavours such as ginger which worked well. They can be frozen with no ill effects that I've observed.

Thanks they look yum.
I keep cold pressed avocado oil for baking and use instead of olive because it has a softer buttery flavour.
