When I found out I was celiac and looked up some recipes that had lots of flours I had never heard of I freaked out a bit. I tried to make everything that I used to with ready made flour mixes but they didn't turn out the way I wanted them to. I decided I needed to experiment and use the other flours and have come up with something I am happy with and very close to the muffins I used to make. Hope you will like these.

1/2 cup Tapioca flour
1/2 cup Soy flour
1/3 cup Besan flour (chickpea)
1/3 cup Millet flour
1/3 cup Sorghum flour
1 teaspoon guar gum
1 teaspoon baking powder
1 teaspoon bi carb soda
1 and 1/2 cups milk of choice
4 Tablespoons EVOO
1 teaspoon vanilla essence
2 mashed bananas

Sift all dry ingredients together
Mix all wet ingredients together
Add dry mix to wet and stir gently till combined.
Spoon into oiled muffin tin.
Makes 10-12
Bake approx 30 mins in 180 degree celcius.
Oops..forgot to add 3 tablespoons of sugar!
