Ingredients

3-4 Leeks
I brown onion
4 medium sized Potatoes
1200 ml of vegetable Stock
300 ml of Milk (I use almond milk)
I-2 tbs of Evoo

Directions

Gently heat the oil and add chopped onions leek and potatol
Cover and simmer gently for 15 minutes
Add stock and milk
Season to taste
Simmer for 15 minutes
Blend to a smooth texture

I made this soup yesterday and it's very tasty, particularly if you leave it to come together for a few hours.
I love leek and potato.
Did you get to cook it with out heating the oil but instead by using a bit of water to simmer?
I make a similar Leek and Onion soup, but I make it in the slow cooker and gut out the oil completely.

Slice the Leeks thinly, fine dice the onion, cut the potatoes into 1/2" cubes, put them all in the slow cooker, add the stock and season with a little salt and some fresh cracked pepper.

Cook on low for 3 - 4 hours, stir every once in a while, when the leeks, onions and potatoes are soft, add the nut milk and cook on for another hour.

Blend 3/4 of the pot and pour back into the slow cooker simmer for another 25 - 30 minutes, serve, eat, enjoy!
