I found this recipe on the BBC Good Food website. I have made it a couple of times and it's really tasty - and easy!


1 red onion, finely chopped
1 garlic clove, crushed
Thumb-sized piece of ginger, peeled and finely chopped
1 red chili, finely chopped
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
400g sweet potato, peeled and cubed
250g lentils (the recipe calls for split red lentils, but I just used a can of green lentils)
600ml veg stock
80g spinach


1. Soften the onion, chili, garlic and ginger in a little water over a low heat.

2. Add the spices and stir the mixture so the onion etc is coated in the spices.

3. Add the sweet potato, lentils and stock. Bring to the boil and then cover and simmer for 20 mins.

4. Stir in the spinach until wilted and serve.

This works as a complete dish on its own, but also works nicely as a side-dish with a piece of baked salmon.

I have also substituted the lentils for chickpeas, which also worked.
Oh this sounds delish with the sweet potato!! i've been getting into a lot of dahl too and find its so tasty, easy and cheap to make!
I'm going to try it with sweet potato now : )
