This recipe makes about 8-10 burger patties

320g firm tofu
3 Tablespoons plain flour
2 Tablespoons rolled oats (oatmeal)
2 egg whites
1/3 cup of any combination of sunflower seeds, sesame seeds, crushed peanuts, chia seeds (good source of Omega 3), pepitas
2 teaspoons soy sauce
1 Tablespoon sweet chili sauce
3 spring onions (scallions), finely chopped
1 carrot, grated
1 zucchini (courgette), grated
breadcrumbs for coating

Mash (or break up finely) tofu. Mix all ingredients together. Use hands to squeeze mixture until well combined. Roll mixture into evenly sized balls, then roll in breadcrumbs to coat. Place on baking tray lined with baking paper and press each ball into a pattie shape with an eggslide/spatula (you can leave them in ball shapes if preferred). Cook in 170 degree oven for 20-25 minutes, until patties are slightly firm and breadcrumbs lightly browned. Serve on good quality bread roll or pita bread, with your preferred combination of salad and sauce.
