This is super easy and great when you're wrecked after a day of work.

Serves about 2

1 x 200g fresh salmon fillet, cut into chunks
3 tablespoons of verjuice
one teaspoon of extra virgin olive oil
220g of dried pasta
1/2 cup frozen peas
salt and pepper to taste

Bring salted water to the boil and add pasta to cook for required time. Add peas to the pasta water about two minutes before it is cooked, then drain pasta and peas together and return to the pot
Five minutes before pasta is ready, heat verjuice in a nonstick frypan over a medium heat. Add fish chunks to verjuice and cook, turning once for about 3 minutes or until just tender. Take fish off heat and add olive oil, salt and pepper to taste.
Pour fish mixture over pasta and stir until pasta is coated. Serve and add addtional salt and pepper as needed.
Serve with a green salad if you're feeling virtuous.
