This spread is now a firm favourite a our house - even with the carnivores!

I find that the cauliflower cooks well with much less olive oil than the 3 tablespoons indicated in the recipe - just a light misting will do. I also cook it at a lower temperature, and for longer. Otherwise the recipe just needs the usual OMS adaptation of frying the onion/garlic mix in Chinese rice wine/sherry/white wine/water instead of olive oil. Heavy cream (double cream in the UK) is obviously not for us. As the recipe says, we can go for vegan stock instead. Or use soy or almond cream*. I find the pate lasts for at least a week in a glass jar in the fridge. It may conceivably help that I usually end up adding rather more brandy than stated in the recipe! My justification is that the mix is a bit dry to blend properly and positively needs another dollop of brandy at that stage :)

The pate is even better when eaten with something a bit hot. A scattering of rocket / rucola leaves, perhaps? Or this (highly addictive) Yemenite Hot Sauce:

That sounds amazing! Almond cream sounds like a thickened almond milk. Do you think almond butter could substitute?

I am glad you like the sound of this recipe, Ladybug. I love it!

I think you do need a liquid to make it possible to blend the cauliflower into a smooth purée. As the recipe author says right at the beginning of the recipe, one can make the recipe entirely vegan by using a vegetable stock (the recipe below is brilliant, and always in my freezer). Using a cream such as soy or almond will make the pate a bit richer but it is not essential. I have also once come across an oat cream. But if there are no vegan creams available where you live, I would just use stock. The pate will still be delicious!
