Apricots are in season in New Zealand at the moment and very good ... and cheap!

1 kg fresh apricots
125 grams ground almonds
125 grams raw caster sugar
2-3 tablespoons orange blossom or rose water

Make a small nick in each apricot and remove the stone.
Work almonds, sugar and orange blossom or rose water to a paste with your hand.
Roll a small portion into a little ball and stuff the apricots.
Place in oven proof dish, cover with foil.
Bake for 30 minutes at 180 deg C (350 deg F).
Serve hot or cold.

Aprricots can be poached in sugar syrup (500g raw sugar, 300ml water, big squeeze of lemon - boil till syrup thick enough to coat the back of a spoon). Bake as above.

Wow, that sounds fab! Going to have to wait 5 or 6 months till apricots are in season in the UK
There's a recipe in Resources for sugar plums which is very nice - sort of similar idea with dried fruit - could be good for a UK winter!

I made these yesterday, replacing the paste with homemade maple cinnamon almond butter. They were awesome :)
