There's a glut of strawberries over here in the UK and this recipe is borne out of that; this is an ideal way to use up all those ripe fruits. This also makes a great dessert to wow guests with at a dinner party; I know how hard good desserts are on this program.

500g Bright red ripe strawberries.
275ml Hot water.
100g Golden sugar.
Juice of 1 Lime
A shot or two of Vodka
A small handful of mint.

1. Wash and prepare your strawberries, removing all the hulls.
2. Meanwhile, mix together the water, Lime juice and sugar, to make a warm syrup.
3. Blend the strawberries together. Add the syrup, mint and vodka to the blender, and blend it all into a rich, red liquid.
4. Pour the liquid into a metal baking tray and place into the freezer.
5. Freeze the granita for 2 hours. Take the tray out of the freezer every half an hour , and use a fork to scrape the ice as it's forming. This is necessary to achieve the desired texture, which is coarser than sorbet.

This recipe can be messed around with for almost any kind of fruit. You will never miss ice cream again.
