I cook 3 or 4 cups of raw brown rice and keep in the fridge for easy quick desserts like these:

Quick Rice Pudding (serves 2)
2 cups cooked brown rice
2 cups milk of your choice (I use soy or oat)
2 tbsp honey or maple syrup
1/4 tsp vanilla extract
1/4 tsp cinnamon
nutmeg to taste
2 tbsp raisins or sultanas

Puree 1 cup of rice with some of the milk (this makes it instantly creamy)
Put all ingredients in pan and simmer for 5 minutes
Leave to cool, and serve warm or at room temperature
