I made this for first time yesterday and am loving it, trying not to eat it all at once! I have frozen some slices, but not thawed them yet. It slices thinly very well, by the way.

Fruit Cake

500g mixed dried fruit (I included apricots)
250ml apricot nectar
1 teaspoon honey
250g mashed pumpkin
225g raising flour
1 teaspoon mixed spice
1 teaspoon bicarb soda

Oil 21cm x 10.5cm loaf tin and/or line with paper.
Combine fruit, nectar and honey in a saucepan take to the boil and reduce heat.
Simmer for three minutes.
Put in a bowl to cool.
Stir in mashed pumpkin, flour, spice and soda.
Bake in a moderate oven at 180c for about 1 hour.
Cool in pan.

Freezes well.


NOTE: Can use slightly less apricot nectar and add some brandy or sweet sherry instead.
I mis-weighed the fruit, putting in about 400g, and I added about 80g whole almonds.
Mmmmm .... sounds wonderful! Might have to make this
