3 ripe bananas
110 grams apple sauce (or 1 apple peeled, chopped and steamed until soft)
50 grams maple syrup
20 ml extra virgin olive oil
100 grams flour
30 grams cornflour
1 heaped teaspoon baking powder
1 heaped teaspoon baking soda
50 grams pecans or walnuts

For the icing
50 grams icing sugar
50 grams maple syrup

Preheat oven 170 deg C.
Blend the bananas, apple, maple syrup and oil until very smooth.
Sift flour, cornflour, baking powder and baking soda and fold gently into banana mix.
Fold in pecans.
Pour into a lined loaf tin.
Bake 45-50 minutes until skewer comes out clean.
Mix icing sugar and maple syrup and pour over when cool.

I made this last night and it turned out very well. I found that it required a lot less time cooking (only about 30 minutes) but that was in fan-forced oven.
