Freeze chopped ripe banana on a tray until firm ( about 2 hours)
Add to a blender with a spoon of honey or pineapple juice.
Blend until smooth and the mix turns pale. Serve immediately in bowls or ice cream cones.

This makes a great after school treat to enjoy with the kids! You could try adding frozen mango or berries for variety. The bananas should be ripe but not black inside :-)

Made it tonight as it was hubby's turn to pick dessert, so we all enjoyed brownie with Ice Cream. I used rice malt syrup & a little vanilla rather than honey & it was good.

So quick & easy, 1 large banana was enough to serve 3 a scoop or spoonful each
