Basic Olive oil pastry:
1 1/2 cups S/R WMeal flour
1/2 cup Plain WMeal flour
Pinch of salt (if desired)
1/2 cup cold water
1/2 cup EV Olive oil

Place the flours, salt in a large bowl stir to combine. Put the water and Olive oil into a screw top jar and shake well (or whisk it in a bowl). Pour the liquid into the flour and mix it until it forms a dough. It is THAT EASY! Do not knead it, simply divide the dough in half and roll out a 25cm pastry for the base and 25cm pastry for the top of the pie.

filling:
2 apples peeled & cored
3/4 cup brown sugar
2tbls WMeal flour
1/2 tsp cinnamon
(I added 1 sliced white flesh nectarine (not peeled) to my last pie)
Slice apples any way you like then add all ingredients to a bowl and stir to combine the filling.

Place 1 pastry in the base of a ceramic pie dish or similar, add the filling then place the other pastry over the top and pinch around the edges to seal the lid to the base.
Cook for 45-50mins on 170 oC
I slice into 8pieces when ready and I freeze the left over slices for another day :)
