This is delicious and moist.

2 Granny Smith Apples, peeled, cored , sliced into quarters
2 Tablespoons honey
1 Cup apple sauce
1/2 cup sugar
1/2 teaspoon baking soda
1 Cup Self Raising Flour
70g almond meal
1 teaspoon vanilla essence
100ml soy milk

Preheat oven to 180 degrees Celsius
Line a 21cm round tin with baking paper
Cut apple quarters in thin segments (about 5 segments from each quarter)
Place in a saucepan with enough water to cover apples. Simmer for 3-4 min until apple soft. Drain and cool.
Once cooled arrange slices in a pinwheel pattern on cake tin base, then drizzle with honey and set aside.
In a bowl, mix apple sauce and sugar .Stir in remaining ingredients. Do not over mix.
Pour mixture over apple. Bake for 40 or until cooked.
Cool then turn out cake.
This cake is worth the effort of preparing the apple.

I made the cake again yesterday and tried 1/4 cup of sugar instead of half and it is fine with that amount.
