1kg dried fruit
1 tin of apricot nectar (405ml)
Splash of sherry or whatever you like
almonds and walnuts
2 Cups wholemeal self raising flour
a little soy milk

Soak the dried fruit in the tin of apricot nectar overnight. I add a dash of cooking sherry or anything you like.
Next day add some almonds and walnuts and add the flour. Add enough soy milk to make the mixture moist.
This is a firm mixture, dont make it as runny as other cake mixtures.
Press mixture into a lined square tin.
Bake approx 45 mins depending on your oven.
A slice of this cake is nice and filling.
