Yes, I agree. She will have to educate herself as to what constitutes gluten (Coeliac UK has good data) and then she will have to be vigilant. From what I understand, even the tiniest amount of gluten can cause problems and people have to be careful of cross-contamination if cooking for others. (Or being cooked for by others - I know my mother does her damnedest to derail me from my ridiculous fad!!)
