Hi everyone!

Hope someone knows the answer to this.
I am trying to learn to cook gluten free bread and I need to know about almond flour.
I am thinking it is probably not good for us as wouldn't it be higher in sat fat than other alternative flours? It is usually mixed with another kind of flour eg rice flour, but I am thinking that there would be a higher content of sat fat just because of the almond flour.

Hi!

I am gluten free as well and I use both almond meal and hazlenut meal to bake with. I don't bake very much, so this is not something I eat every day. I have found most often that in 1/4 a cup there is approx 14 grams of fat and 1 gram of saturated fat. If I use this in a recipe it only becomes a small part of the entire portion. Does that make sense?

I am always on this blog. She has MS and is gluten free. Explore this website for some really amazing gluten free recipes. Not all of her recipes are vegan so you might have to substitute here and there...Lots of almond meal recipes here!!!!!!

I also make socca a lot. It is like a flat bread made out of chickpea flour. This is my go to SUPER EASY "carb". I usually put veggies on my socca but you can get creative with it =)

I also make a Flax Foccacia as well...here is the recipe:

Flax Foccaccia (egg free)
1 3/4 cup ground flax
1 Tablespoon baking powder
1 teaspoon salt
1 cup water
3 Tablespoons olive oil
Optional seasonings:
1 Tablespoon rosemary
1 teaspoon garlic powder or 1 clove minced garlic
Paprika
Mix wet ingredients together
Add ground flax
Let stand for 5-10 minutes until slightly thickened
Spread on a piece of parchment paper spread on a cookie sheet – should be about ½” thick
Bake for 15 minutes at 450

And while I am at it... here are my favorite gluten free snacks! They really do taste like cheez-its. I think kids would love these! Switch out the safflower oil for olive oil to make them OMS friendly.

Thanks for your recipes and links! Great.

I understand about the quantity of almond flour dictating the amount of sat fat- but some of those recipes eg Bread 2. (Elanas pantry) have 1 and a half cups of almond flour. That raises the sat fat content considerably.
It sounds like flat bread and naans are the way to go!

I sometimes just really miss a slice of bread!

By the way, an alternative milk question. I have not been able to locate a soy or rice milk without canola oil (or some labels say vegetable oil). What brand is everyone using or these milks?

Fair Trade Rice Drink has small amount of sunflower oil. Calcium from seaweed. It tastes OK chilled on breakfast. Can make a white sauce with it and small amount of EVOO, so does OK as a replacement.

Any locals use some OMS friendly brands- rice milk, soy milk?
