I have been strictly following the OMS program since my diagnosis in July. I'm so thankful that I found it as well as this site! Yes, there are some foods that I miss, and I am working hard to try to find satisfying substitutions. My question is, is it acceptable to use Earth Balance in baking? Is anyone familiar with this product? I have used this product for several years (before diagnosis). I'm thinking it may be ok because it is non-hydrogenated and dairy-free. Would love to get some feedback!
I looked up the nutrition facts and it doesn't look good. It contains 3 grams of saturated fat per 14 gram serving, and listed among the ingredients of the 'natural oil blend' are palm fruit, canola, soybean and other oils.

Margerine and palm oil are on the list of foods not to eat.

Extra virgin olive oil is the only oil we should be using in baking.

My mum got me a low fat cookbook that recommends handy substitutes like using fruit puree in baking: http://www.amazon.co.uk/Ultimate-Fat-fr ... 1859673554
