Nearly all the Vegan recipes I can find ("Deliciously Ella", for example) seem to use coconut products, which I understand are to be avoided in the OMS diet. Please can anyone suggest suitable alternatives to coconut oil in baking, where olive oil does little to enhance the flavour!

Generally coconut is used because it sets hard at room temperature.
There are no good substitute for coconut when used because it sets like butter. Try a different recipe.
Applesauce can be used as an oil alternative. Experiment.
If coconut is just used for flavour, coconut essence is permitted on OMS.
