Hi guys,

Can anyone advise on a substitute for evaporated milk?
I assume I can use soy milk, but do I need to add anything to thicken if up? It will be used in a prawn pasta dish.

Prawn pasta, my favourite. Last year I discovered it goes even better with a small amount of pineapple.

Anyway, yes soy milk and a bit of rice flour works well for me, plus the coconut essence if you want it to taste like coconut milk.

Enjoy. I'm having salmon sashimi for tea and can't wait.
