Soy Tzatziki

Tzatziki is a cucumber, yogurt and garlic dip which can be eaten as a dip or a spread. Picture kindly sent in by Linda.

Ingredients List

 

Serves 1
  • 3 tbsp lemon juice
  • 2 cloves garlic
  • 1/2 cucumber
  • salt
  • 500 g soy yogurt (unsweetened) thick or strained
  • 2 tbsp extra virgin olive oil
  • sprigs mint - fresh
  • bunch fresh dill You can use mint or dill, or both

Instructions

  1. Cut the cucumber in half, remove the seeds to stop the tzatziki from being too wet.
  2. Finely grate the cucumber. 
  3. Sieve the cucumber pressing out the water.
  4. Spread cucumber on tea towel and pat dry.
  5. Mince garlic and add to olive oil.
  6. Finely chop the herbs.
  7. Stir herbs and garlic oil into the soy yogurt. Add lemon juice, salt and some ground pepper. 
  8. Leave for a few hours or overnight if possible.

Option: sprinkle paprika on top
