So I made these today and they were a great success!

I used Wild caught Cod loins, Panko bread crumbs.

Ingredients
1/2 cup Panko dry bread crumbs
1/2 teaspoon salt
1 teaspoon paprika
1/2 teaspoon lemon-pepper seasoning
1/2 cup all-purpose flour
2 large egg whites, lightly beaten
2 cod loins, cut into 1/2-inch medallions

Add the seasonings to the Panko, mix thoroughly.

Beat the egg whites in a bowl.

Slice the fish, dredge the fish in the flour, dip and turn in the egg whites, flip into the panko mix, cover with the panko mix, put onto a tray lined with parchment paper, put into a heated oven at 400°F, (204°C), I got enough to fill me up with fish tacos, coleslaw, salsa, wrapped in tortillas.

Just made these cod strips for dinner - it tasted really good! I struggle eating most types of fish, so this simple white fish recipe really helped, thanks.
