Cashew Cream

Cashew cream is a great dairy-free substitute for regular cream for those following the OMS Recovery Program - here is a quick and easy recipe for it. Based on an original recipe kindly sent in by Jack McNulty.

Ingredients List

Serves 12
  • 1 ½ cups unsalted cashews (Pre-soak in water for at least 3-4 hours)
  • 120 ml almond milk or water
  • 2 tablespoons maple syrup (More can be added to suit your taste)
  • 1 teaspoons vanilla essence
  • pinch sea salt

Instructions

  1. Drain the cashews and discard the soak water
  2. Pour the water (or almond milk) into a high speed blender along with the cashews, maple syrup, vanilla essence and salt
  3. Blend on high for 30 to 60 seconds, until smooth and creamy. Adjust if necessary the water almond milk, sweetener and vanilla to taste
  4. Chill in the fridge for an hour or two to thicken

you will need 3-4 hours to make this recipe from start to finish
