Aduki bean salad with tahini dressing

A really quick and easy and super tasty salad. Great for lunch or salad to accompany a BBQ. Thanks to Anita for sharing this recipe.

Ingredients List

Serves 2
  • 1/4 cup tahini
  • 2 tbsp extra virgin olive oil
  • tbsp garlic minced
  • 2 tbsp lemon juice
  • salt and pepper
  • 4 cups baby spinach
  • 1/4 cup spring onions
  • 1/2 cup snow peas
  • 1 cup aduki beans drained
  • 1 cup mung bean sprouts


  1. In a small bowl, whisk together the tahini, olive oil, garlic, lemon juice, salt and pepper. 
  2. Place the spinach, spring onions, snow peas, bean sprouts and aduki beans in a large salad bowl.
  3. Pour the tahini dressing over the vegetable mix and toss together to coat.
