- 1/4 cup tahini
- 2 tbsp extra virgin olive oil
- tbsp garlic minced
- 2 tbsp lemon juice
- salt and pepper
- 4 cups baby spinach
- 1/4 cup spring onions
- 1/2 cup snow peas
- 1 cup aduki beans drained
- 1 cup mung bean sprouts
Instructions
- In a small bowl, whisk together the tahini, olive oil, garlic, lemon juice, salt and pepper.
- Place the spinach, spring onions, snow peas, bean sprouts and aduki beans in a large salad bowl.
- Pour the tahini dressing over the vegetable mix and toss together to coat.
