Almond & Citrus Friands

A familiar favorite in Australia and New Zealand, this little icing sugar-dusted almond cake with lemon or orange zest is well worth a try!

Ingredients List

Serves 5
  • 40 ml extra virgin olive oil
  • 220 g icing sugar
  • 60 g plain flour (sifted)
  • 120 g ground almonds
  • 5 large egg whites (free range)
  • 1 tsp lemon zest or orange zest
  • 1 dusting icing sugar


  1. Heat oven to 200° C.
  2. Coat friand tin or muffin tin with olive oil.
  3. Sift icing sugar and flour into bowl and mix in ground almonds.
  4. Lightly beat the egg whites then fold into mixture.
  5. Add olive oil and rind.
  6. Three quarter fill moulds.
  7. Bake on middle shelf for 10 mins then turn around & bake another 5-10 mins.
  8. Leave in tin for five mins then remove.
