Chickpea and Sun-Dried Tomato Dip

A fantastically rich tomato flavoured chickpea based dip. Recipe kindly provided by Kaye.

Ingredients List

Serves 4
  • 300 can chickpeas (drained)
  • 1 cup sun-dried tomatoes (drained)
  • 1 cloves garlic (crushed or chopped)
  • 0.5 cup fresh herbs (firmly packed)
  • 2 medium lemons (or limes, use the juice only)
  • 0.25 cup extra virgin olive oil (can increase to half cup)


  1. Whizz until smooth and red, adjust seasonings.
  2. Serve with vegetable sticks or saturated fat free biscuits (e.g. Salada Light).

Add salt and pepper to taste.

• Use fresh herbs of your choice  e.g. parsley or coriander .
