(This recipe makes 32 energy bites)
- Put the oats, cashew nuts and dried cranberries into a food processor and pulse to a fine crumb. Reserve 4 tbsps in a shallow bowl.
- Add the rest of the ingredients to the bowl of the processor and blend everything together until it starts to clump.
- Using gloves or keeping hands wet with cold water, roll the mixture into small balls (about 15 g each).
- Roll each of the balls in the reserved crumb to coat.
- Place on parchment paper and chill in the fridge for 30 minutes to firm up.
