Minted Courgette Ribbons

This recipe from Kaye is easy to make - you will just need to prepare the dressing the night before.

Serves 6
  • 1 kg courgettes (zucchini)
  • 1 medium red pepper (finely chopped)
  • 0.25 cup extra virgin olive oil
  • 0.25 cup lemon juice
  • 1 tsp sugar
  • 3 tsp honey
  • 2 tbsp mint (fresh and chopped)

Instructions

  1. Combine dressing ingredients in a jar, shake well and season with cracked black pepper and salt.
  2. Cut the ends off the courgettes.
  3. Using a vegetable peeler, peel thin strips along the length of the courgettes.
  4. Chop red pepper into small pieces
  5. Combine the courgettes, red pepper and dressing in a bowl, toss lightly and serve.
  • Make the dressing the day before and keep covered in the refrigerator.
  • Prepare the courgettes and red pepper just before serving. The courgettes will go soft after several hours in the dressing, but it still tastes good!
  • Use cracked black pepper and salt to taste.
