Mocha Self-Saucing Pudding

Delicious, chocolatey winter recipe for dessert.

Ingredients List

Serves 2
  • 150 g self-raising flour
  • 35 g cocoa powder
  • 165 g caster sugar
  • 2.5 tsps instant coffee powder
  • 125 ml soy milk
  • 1 tbsp extra virgin olive oil
  • 100 g brown sugar (firmly packed)
  • 310 ml boiling water
  • 1 tbsp icing sugar mixture


  1. Preheat oven to moderately low.
  2. Sift flour, 2 tablespoons of the cocoa, sugar and 2 teaspoons of the coffee powder into 1.25-liter (5-cup) ovenproof dish.
  3. Gradually stir in milk and extra virgin olive oil.
  4. Sift brown sugar, remaining cocoa and remaining coffee evenly over flour mixture.
  5. Gently pour the water over brown sugar mixture.
  6. Bake pudding, uncovered, in moderately slow oven about 45 minutes.
  7. Serve dusted with sifted icing sugar.

Make sure the cocoa powder doesn’t contain milk and is a high cocoa percentage.
