- 4 pears ripe
- 750 g caster sugar
- 1 cinnamon stick
- 1 lemon juice
- 5 cloves
- 5 cm fresh root ginger peeled and sliced
- 1 star anise
- 1 vanilla bean split lengthways
- 370 g mixed berries frozen
- 1 tbsp brown sugar
Instructions
- Fill a large pan with all the ingredients, except the pears.
- Half fill the pan with water and bring to boil. Let the water simmer for 10 mins to infuse
- In the meantime, peel the pears and then gently drop them into the water.
- Poach for about 30 mins, until soft.
- To make the berry compote, place the berries in a small saucepan over a low heat with the brown sugar and bring to a simmer.
- Cook for about 20 minutes, until soft.
