Pumpkin and Tomato Soup

Bright and easy autumn pumpkin soup for a tasty lunch or a starter.

Ingredients List

Serves 3
  • 0.5 medium pumpkin or winter squash (peeled and chopped)
  • 2 medium onions ( (diced)
  • 2 cloves garlic (crushed)
  • 3 lt vegetable stock
  • 1 tin chopped tomatoes
  • 2 tbsp tomato paste (add more to taste)
  • 0.5 tsp nutmeg
  • 1 tsp curry powder
  • 0.5 tsp black pepper freshly ground (and tamari, or salt, to taste)


  1. Take pumpkin, onions, garlic and stock and place into a saucepan.
  2. Bring to the boil, then simmer until pumpkin is tender.
  3. Cool and mash or blend (optional), then add the rest of the ingredients, reheat gently and serve.
  4. Add a little soy milk at this stage, if desired.
