This dish is a great way to pack in lots of plant-based protein in a tasty meal!
Preheat the oven to 200 C / 400 F
Cook your sweet potatoes in the oven for at least an hour or until soft.
Meanwhile, heat a large skillet. Add the onion and pepper and saute until tender, with a dash of water for about 5 minutes.
Add the sweetcorn, cooked quinoa, black beans and spices and cook 2 – 3 more minutes.
When the sweet potatoes are tender, remove from the oven.
Slice in half and fill with your quinoa mixture.
Serve with guacamole and salad.
