Smoked Salmon on Herbed Spaghetti

Serves 2
  • 400 g spaghetti
  • 2 tsp lemon rind (finely grated)
  • 0.25 cup lemon juice
  • 2 tbsp extra virgin olive oil (or flaxseed oil)
  • 1 medium avocado (diced)
  • 200 g salmon (smoked or tinned, flaked)


  1. In a small bowl mix together the chives, parsley, lemon rind and juice and oil.
  2. Cook the spaghetti in a large pot of boiling salted water, until al dente, and drain well.
  3. Return the pasta to the pot and stir in the sauce ingredients.
  4. Add the avocado and salmon and mix gently.
  5. Season to taste and serve.
  6. You can also add other ingredients like rocket, sun-dried tomatoes, olives, etc.
