Summer Berry and Walnut Salad

This light and fruity salad makes a perfect lunch for warmer days. Recipe kindly sent in by Lorna.

Serves 1
  • 4 cups baby spinach
  • 1/2 cup fresh berries blackberries or blueberries work well
  • 8-10 strawberries hulled and thinly sliced
  • 2 tbsp honey
  • 2 tbsp dijon mustard
  • 1/4 cup balsamic vinegar
  • 1/4 tsp sea salt
  • 1/2 cup walnuts unsalted

Instructions

  1. In a large bowl, toss spinach with blueberries and strawberries. Sprinkle walnuts over the top. 
  2. In a small bowl, whisk together honey, mustard, vinegar and salt. I serve dressing on side, dress salad before sprinkling walnuts over if you prefer.                                 

Salad dressings are easy and a great way to be creative. You could try adding pomegranate molasses, found in middle Eastern shops, instead of the honey.

You could also add pomegranate seeds in place of the berries. 

Toasted pecans, dry roasted on the stove top for 2-3 minutes until fragrant are nice to add too.
