Tahini, Zucchini and Tomato Spread

A nutritious vegetable based spread with umami flavours

Ingredients List

Serves 4
  • 1 tablespoon miso
  • 1 tablespoon tahini
  • 4 tablespoons zucchini (grated) aka courgette
  • 2 diced tomatoes
  • 1 tablespoon spring onion
  • 1 clove garlic

Instructions

  1. Grate zucchini, and chop tomatoes and spring onion. Crush Garlic. 
  2. Put all the vegetables into a bowl. Add the miso and tahini. Blend. 
  3. When you have reached the correct consistency, spread on corn/rice cracker thins.
