Vegetable Barley Stew

Ingredients List

Serves 10
  • 1 quart vegetable broth (low sodium )
  • 1 quart water
  • 1 cup pearl barley (uncooked)
  • 3 carrots (large size, chopped)
  • 3 stalks celery (chopped)
  • 1 can diced tomatoes with juice
  • 1 courgette (600 (medium size)
  • 1 squash (chopped)
  • 1 can chickpeas drained and rinsed
  • 1 onion (chopped)
  • 1 bay leaf
  • 1 tsp garlic powder
  • 1/2 tsp black pepper (ground)
  • 1 tsp parsley (dried)
  • 1-2 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tbsp soy sauce (low sodium)

Instructions

  1. Add all the ingredients to a soup pot, bring to a boil, then cover and reduce to a simmer over medium-low heat for 40-45 minutes.

  2. The stew will be thick. You may adjust by adding more broth or less barley if desired. Enjoy!
