Warm Potato Salad with Capers

An easy, tangy potato salad side dish

Ingredients List

Serves 3
  • 6 medium potatoes (waxy potatoes work best)
  • 3 medium spring onions
  • 1 tbsp capers (small rinsed)
  • 2 tbsp dill (chopped, or parsley, or chives)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard


  1. Cut potatoes into small pieces 
  2. Cook potatoes until tender but firm, about 20 mins.
  3. Finely chop spring onions.
  4. Combine dressing ingredients and add capers, spring onions and chopped herbs and toss.
  5. Drain the potatoes and then slice
  6. Toss them carefully in the dressing while still warm and serve.

Add sea salt and ground pepper to taste.
