(waxy potatoes work best)

medium spring onions

capers
(small rinsed)

dill
(chopped, or parsley, or chives)

extra virgin olive oil

tbsp
red wine vinegar

tsp
dijon mustard

Instructions
Cut potatoes into small pieces
Cook potatoes until tender but firm, about 20 mins.
Finely chop spring onions.
Combine dressing ingredients and add capers, spring onions and chopped herbs and toss.
Drain the potatoes and then slice
Toss them carefully in the dressing while still warm and serve.
Add sea salt and ground pepper to taste.
