- 6 egg whites
- 6 chia egg
- 200 g oats
- 200 g ground almonds
- 15 ml liquid sweetener such as liquid Stevia
- 130 g pitted dates
- 2 tablespoon lemon juice
- 1 apples roughly chopped
- 1 tablespoon baking powder
- 50 ml extra virgin olive oil
- salt pinch
- 200 g blueberries

- Mix everything, except the berries, in the food processor. (You might want to beat the egg whites separately in advance for a fluffier muffin.)
- Gently mix through the blueberries
- Spoon the mixture into muffin cases and bake for about 20 minutes at 180C degrees
- Check if your mixture is cooked by piercing a wooden stick in, if it comes out clean the muffins are cooked.
These muffins can be frozen and defrosted whenever you fancy a sweet treat.
Delicious with jam on top too!
