Ingredients List



  1. Prepare red onion and coriander (chop finely) 
  2. Put your grill (broiler) on high
  3. Put aubergines (eggplants) on a tray, whole and grill one side for 15 minutes 
  4. Turn over and grill on the other side for an additional 15 minutes
  5. Remove from oven and leave to cool 
  6. Halve and scoop out insides of the aubergine into a bowl, mash, and discard skins 
  7. Mix aubergine (eggplant) with salt, olive oil, onion, chili flakes, cumin and coriander to taste 

Serve with flatbread and salad.
