- 1 ½ cups unsalted cashews (Pre-soak in water for at least 3-4 hours)
- 120 ml almond milk or water
- 2 tablespoons maple syrup (More can be added to suit your taste)
- 1 teaspoons vanilla essence
- pinch sea salt

- Drain the cashews and discard the soak water
- Pour the water (or almond milk) into a high speed blender along with the cashews, maple syrup, vanilla essence and salt
- Blend on high for 30 to 60 seconds, until smooth and creamy. Adjust if necessary the water almond milk, sweetener and vanilla to taste
- Chill in the fridge for an hour or two to thicken
Note: you will need 3-4 hours to make this recipe from start to finish
