- 30 g dijon mustard
- 80 g apricot paste or sweetener (agave or honey)
- 1.5 tbsp shallot (minced)
- 100 ml rice vinegar
- 0.25 tsp black pepper (freshly ground)
- 0.5 clove garlic (minced)
- 2 tbsp tarragon (minced)
- 2 tbsp nutritional yeast
- 1 splash orange juice (optional)

- Whisk together the Dijon mustard, fruit paste, shallot, vinegar, black pepper, garlic, tarragon and nutritional yeast.
- Thin slightly with a splash of orange juice if you think the dressing is too thick.
- (Tip: use a jar with a lid to make the dressing by combining everything in the jar, fastening the lid and vigorously shaking to create an emulsion).
