Smashed Peas on Toast

This is a great savoury breakfast or a perfect pick me up snack. The peas are blended with lemon juice and flaxseed oil and you can sprinkle chilli flakes on top for an extra bit of spice.

  1. Steam the frozen peas for 2-3 mins until they are tender. 
  2. Drain and add to a high speed blender along with the lemon juice, tahini, flaxseed oil, lemon zest and salt and pepper.
  3. Taste and add more lemon if needed or more tahini for creaminess. 
  4. Spread the pea puree on your favorite bread.
  5. Sprinkle chilli flakes on top, if desired.
